The Chung’s Teriyaki Story

Chung’s Teriyaki finds its roots in the pots and pans of the curbside vendors of pre-war Vietnam.

As a child, owner Chung Nguyen enjoyed the simple but fresh dishes of home in Vietnam, including vermicelli bowls (Bun), Pho noodle soup, and freshly made spring rolls. After the fall of South Vietnam in 1975, Chung was forced to flee, packing onto an overloaded wooden boat with hundreds of other refugees, and ultimately being accepted into the United States. As luck would have it, he was assigned to a sponsor family that lived right here in Kitsap, and it’s been home ever since.

A serial entrepreneur with a passion for good food, community and giving back, Chung perfected his secret teriyaki sauce recipe and opened the original Chung’s Teriyaki location in Poulsbo Village in 1994. Seven years later, in 2001, Chung jumped on the opportunity to open a larger venue that supported dine-in and drive-through service in the heart of Silverdale. After years of tweaking and perfecting his tantalizingly complex Pho soup recipe, the Silverdale location further allowed Chung’s Teriyaki to expand the menu and begin offering their now-famous Pho.

In 2017, Chung’s Express opened in Downtown Bremerton, serving up Kitsap’s favorite made-to-order lunch options just steps from the Bremerton-Seattle ferry and the Puget Sound Naval Shipyard. Most recently, in January 2024, the Chung’s Express Bremerton location was sold to a 20-year employee of Chung’s Teriyaki.

While both the original Chung’s locations in Bremerton and Poulsbo continue to bear the Chung’s Teriyaki name, the businesses are under separate ownership and bear no relation to Chung’s Teriyaki Silverdale.

Remembering Khai Truong

On April 16, 2020, beloved Chung’s Teriyaki Manager and family member Khai Truong passed away from a stroke at the age of 57. Those who had the great fortune of knowing him remember Khai’s warm, outgoing spirit, and his passion for getting to know hundreds of Chung’s Teriyaki customers. He found great joy in their conversations together and a created a library’s worth of photo books featuring everyone who came through the door. Those photo albums live on today at Chung’s Teriyaki in Silverdale—we hope you find as much joy in looking at them as our brother Khai did.
